The first step in the process is to determine your aims and ambitions. We will:

  • Fully develop the design brief from your menu, numbers to be served, timeframe for service and your style of foodservice.
  • Establish where on the scale from whole life cost or capital cost you are aiming and are able to budget.
  • Be aware of the skill sets and methods of catering that you have, or intend to adopt and plan for these accordingly.
  • Establish If there is a desire to be able to adapt your facility to an alternative offer in the future and plan to enable that adaptation.
  • We will not back away from challenging those providing the brief, as their perception of their requirements may be derived more from a ‘business as usual’ approach rather than from current available innovation and technology.

Once the brief is clearly established, with your vision and our creativity, we can work within the framework of space allocation, building fabric/services and budget to create the appropriate Flow, Function and Quality for your kitchen. If you have the correct flow patterns you create efficiency, reduce risk and cost. Coupled with appropriate equipment selection we will deliver your facility against that brief. Getting the quality right is our hallmark and will ensure your facility continues to perform throughout its lifetime.

Services, consumables, labour and facilities management costs continue to grow strongly and those incurred over the life of your facility will be greater than the initial setup cost. Add to this the enhanced liabilities of an operator to protect building fabric, public services, staff, customers and the public, it is essential that we consider minimising your establishment’s demand. Ventilation, energy efficiency, waste management, treatment of FOG and heat recovery will all become of greater importance to you, the operator, in the future.
